as of the newest version of Audacity, it can't be done. if you set up 8 tracks and hit "record", you'll get 8 identical tracks, each with a mixture of all 8 input signals.
I emailed the developers, at the time they weren't in a hurry to change this.

if you use the earpiece, you can just do one wire to ground, one to hot, and it will work. if you want to use the mouthpiece, you need to add voltage.
