Wow, You lucked into an amazing mixdown machine. You can record independently on either track. PURC is built into the audio boards already, and that only has to do with punching in/out seamlessly. Not really, You have to be careful to not bump the capsule or let any solder flux spittle rain on it (rubber base slides out). I think the only thing you need to desolder is the XLR connector (IIRC). On my old A80RC 1/4" there was a mono erase head, so it wasn't possible to record on the tracks individually. I seem to remember there being no way to monitor off the sync/record head either.
