You should make an XLR patchbay for your mic signals and preamp inputs. Then, use a TRS patchbay for your inserts and compressors. Slightly more expensive than some of the recommendations, but I'd definitely recommend checking out the Adam A_x range. I have the A7x's and they sound great. It seems like a laptop would be fine for mobile recording. You don't have the live-or-die aspect of a live recording, and a little downtime probably isn't a big deal.
