In my opinion, a U87 is anything but a go to mic. It's great for vocals and alright for everythng else. Frankly, I'd take a TLM 127 over a U87, and it's cheaper. That being said, a lot of people love the R series for everything but vocals (some even use it on snare, which I wouldn't dare unless I RE...

Well, as far as cellos and acoustic go, try the R-121 or 122 (same mic, just 122 will put phantom power to use while the 121 can handle phanntom power without destroying it). I'd say go for an AKG 414 (great all around mic) and a couple sm57s. Or, if you prefer, a 414 and a MA-200 would be just within your price range.
