In no particular order, and wih no regard for specifics:
Starting with places that I know a bit about
Silo Sound in SE Denver. Lotsa analog goodness: Emt 140, 2" 16 and 24, classic mics, Sony 3036 with some API modules.
Evergroove in Evergreen. Wes Lachot designed facility. Probably the best control room in the area.
Audio Park in Wheatridge. Recently relocated to a nicer, newer facility.
I think 8 Houses Down is shutting (or shut?) down. Great brick drum room, another Sony console.
And a couple places run by TOMB regulars (that I sadly don't know much else about):
Atom Land
Furnace Room
