But to be fair, great records have been made with acoustic pickups! (probably mixed in with mics). Kaki King and California Guitar Trio come to mind.

I don't have a solution, but I just wanted to say how glad I am to be reading this thread. I think I'm the only musician in my circle of friends who thinks acoustic guitar pickups sound shitty. Of course, they're great to have in a live situation, but they really sound awful and I can't imagine why someone would want to record with one.
