Okay, we had the thread about sounds we hate. Here's the thread for sounds we like. My faves:

Ondes martenot
Bass flute
Jangly Britpop guitars
Brushed kits
Fender Rhodes
Tape saturation
Beautiful noise a la Sonic Youth or My Bloody Valentine

pedal steel guitar
overdriven tube amps
wind (not the instruments, the force of nature)
rain, or any moving water for that matter, ocean, river, etc)

and oddly enough, that clanking hard knocking sound a pinball machine makes when you score a free game or get a "match". Always wanted to put that sound on the end of an album.

French horn

The buzzing when the end of a 1/4 cord touches somebody's fingertip as an amp/guitar connection is being made

The sound of a barista whacking the espresso grounds holder on the rim of a trashcan, when it blends into the ambience of a cafe

The sound of tape starting and stopping (prominently heard on "Wowee Zowee"
