Measure the shaft (heh) and go hunt around on digikey.com or mouser.com for knobs. They have nice result filtering searches so you can zero-in on what you're looking for pretty quickly.

My guess is that this is a straight-up AC motor and modulating the voltage won't change the motor speed, just the power. You would have to replace that motor with a DC motor or a stepper motor, or an AC/DC mechanically commutated motor etc. to control the speed. Leslie-owners and motor gurus, please...

I've just recently had a similar situation using the ProRMP (passive) reamp box. I'm sure you can find the thread if you search. I went through pretty much everything you have described here and ended up re-tracking the guitars with a mic'd cab. The DI tracks thru the reamp just wouldn't hit the amp...
