Heya. This March-ish, I sort of did the "write a song a day" thing, only with ambient loops/soundscapes. I think it came out OK, but my influences are right there on my sleeve. Feel free to yoink it for zero bucks, I've never been in it for the money.

I'm late to the party, but definitely check out Steve Lehman. I'm partial to his newer stuff (Steve Lehman Octet), but pretty much all of his music is rhythmically interesting/challenging.

I do my mobile recording on a 2009 Lenovo T-61 running Win 7 Pro and PT11. I can't imagine that there would be a problem with that laptop.

I love the Senn HD380 - very comfortable with large earcups that surround the ear, come with a travel/storage case (not a bag), and they sound pretty nice. Should be well within your budget, in fact I think the price on them recently dropped. Showing 99 squiggly bits on Amazon UK.

Melora (Rasputina) uses/used a K&K Twin Spot. Relatively cheap and easy to install, handles distortion well.

OP - I bought an i5 on the day it first became available. I tried it on snare (I'm a live-only guy, BTW), and it has stayed there ever since. I kind of want just a teensy bit more close-mic drums in there, but overall it sounds pretty awesome to me. It's also a great video for a cool song. I like it, and I hate everything. I might even check these guys out now.
