If you don't need to re-export a video file once you've completed your overdubs, this should work for your purposes, and you'd have the option of exporting each of your passes as a separate audio file.

I don't have firsthand experience with the Tascam MTS-30, but looking at the description of your setup, wouldn't the Yamaha RX8 need to be connected to MIDI Out from the MTS-30, rather than MIDI In?

You will not be able to play other tape widths on this machine – it is made to use 1/2". Trying a 1/4" tape will not work because the track widths are different.
Are you in the USA? If so, what part? I'd be glad to give you some recommendations on a technician to have a look at it.

It's unlikely that it's a generic, readily-available part, but I could be wrong. 3D printing is an option.
