The traditional answer is "try both with the particular players". To my brain the phase-dependent interplay of a Mid-Side setup makes it really hard to imagine how it will come out in advance, so experiement! it's fun!

Mid-Side a waste of time? nah. Once you've got a mid-side setup for the whole ensemble and each instrument miced individually, my initial response would be to try and use the close mics as little as possible. Actually a good question to me is: is it worth it to get a pair of NS-10's as a "bad reference" (in addition to a better one) or to simply learn one better sounding pair of speakers really well? Also, are there any new speakers that fill the gap left by the NS-10's?
