Here Comes the Sun - has some cool syncopated claps, tight and fierce sounding, esp. where they come out of the bridge back into the verse. Today, that is my vote for the best, although it's a tight race btwn those and the 'who are you' claps as performed in 'the Kids Are Alright' movie as mentioned...

nope, it's not just you... he's truly unbelievable. I've found some info at http://www.keeslau.com/TomWaitsSupplement/ - click 'Biography' and then 'Interviews' - some of the interviews have recording tidbits. And your impressions are right on, he did record outside (with live rooster) and live, etc...
