One of my favorite things is to mic the beater side and the resonant side (if no hole) and hard pan them. It's like having your head inside the kick drum. In a good way.

picked up a 1970's Pioneer SR-202W "reverberation amplifier". It's a consumer device meant for home stereo use. Make sure you give underheads with the omnis a try.
For me it would all depend on the sound you're going for and what you're hearing when you're moving the mics around. Like on some songs a kick drum mic between the snare and kick drum is all you need.

I gotta say, I'm realizing that gear is a huge part of this. I bought a new mixer and recorder this year that are higher fidelity than anything I've ever used before and my recordings are higher fidelity. Like mind-blowingly higher. You can only do so much with audio that's been put through bad circ...
