I am going to use this technique later today to track some guitar and vocals so I will try out some LDC's!...

This is a cool little piece of gear! It is most definitely a one trick pony but it does that one trick very well! I used this on the stereo output on a mix of one of my recent tracks and it really added a lot of punch to the lower end while smoothing out the top end. I have achieved similar results ...

I really enjoy my Ensoniq esq-1 that I picked up for 175$ it has some really cool tone shaping capabilities! Have you thought about using soft-synths and a controller? Anytime I have recorded a pedal steel I have always mic'ed up the amp! I have just never felt the need to DI a pedal steel as it seems like it would take away from the organic feel of the instrument! I would check out the Tascam VL-A5's they are a great sounding monitor and are very affordable! They have a very clear representation of what you are listening to not an overly hyped high and low end!
