Jon, I would recommend against any windows unless you can get 5/8" (16 mm) MINIMUM thickness, single pane, LAMINATED glass. You'll have to build the frames custom. Do this for each partition. Cement board then. :) Mass is mass. Mold will grow on the wood studs rather than on Cement board. It is the paper on gypsum board that the mold will eat.. it doesn't eat gypsum.
