I sometimes make notes in Pro Tools, sometimes when I'm double micing something and using 2 tracks to do it the track name will include the mic. Like GTR M88, GTR 635a. I charge hourly. I have a 2 hour minimum for solo/duo, and a 4 hour minimum for groups. As the owner/operator the amount of hours billed isn't always the amount I work. I keep a very loose clock. Remote drum tracks I charge per track.

I don't work in stems, and I don't even make a lot of groups for mixing, but if you're doing this to minimize CPU, why not make a new subgroup for the stem to go to, and rout everything to it, record it, and then disable the individual tracks? Or refuse mix gigs if the tracks won't fit onto your sc...

My very favorite mic in the world is the Beyer M88 and it's hypercardioid and I used it on a TON of sources. I usually use an AT ATM23he on snare, also a hypercardioid. Beyer M201 sees a decent amount of use in my room, also hypercardioid. I've did ribbons in Bluemlein for rooms a few times recently...
