Also consider that the guitar is never more than 80% in tune mathematically. Do you tune to harmonics or open strings? If so, how often do you actually play open strings? tuning with fretted notes gives you equal temperament. tuning with harmonics will give you some weird mutant that probably evolv...

Maybe you could try convolution? Record the sound of a balloon popping in your oven or directly in front of it, and then use it as your IR with something like Space Designer or whatever that fella is that comes with Peak these days.
