My EH12ay7 has always had more gain than I needed so I'm planning on using dual JJ 12AU7s. I'm thinking that having less gain will also extend the signal range somewhat due to less miller capacitance on the grid of the tube. Hopefully, this will sound good. Now I just need a amp repair/amp build job...

From what you've described, I would think that you have a parasitic oscillation. These are usually caused by poor lead dress (the physical arrangement of the wires). It could be other things as well, it might need a cap job, you might have a preamp tube that's very microphonic.
