i would get the extra length. In my experience, as soon as you get all your cabling just right and nice and neat, you find you need to move something , and every cable is about a foot too short.

You should buy that Ghost. I used one for years, and they are a ridiculous amount of console for the money. The routing is matched by no other console ever made ever. And those mods will surely take it to the next level. Perfect for what you are describing.

The issue I had with the insert point is that it is unbalanced -10dBu, pre master fader. Ideally I'd like to have the insert after the fader and makeup gain, so I can drive the inputs of the post processing hard.
