You could try just using spaced pair on the whole band. Put the drums in the middle of the room amps on the sides. This works well for quick demos, with decent condenser mics. Not sure how well it word work with dynamics into a portastudio. I just got a 16 channel mackie used from my local guitarcen...

Your board has inserts on its first four channels. Those should be able to be used as outputs with a TS cable plugged in half way. Depending on how you monitor stuff, you could use the main outs, and the aux sends as outputs as well. So that brings you to 6 outputs on your board total. I would guess...
