Not trying to discourage you but you might be surprised at the cost of tools (particularly clamps) to build a guitar even from a kit. I had a bogen m60a in the early '70s that I used as a guitar amp. It had a switch on each channel near the input xfmrs to switch to high impedance (basically bypassing the xfmr).
