The output transformer will provide isolation if you need it and might add some "color" to the sound. Try it, you might like it.
I don't know why the op amp would be changed. John Hardy's are great.

The 1:2 output transformers are definitely a good idea if you need the gain. I recently built an Eisen 500 kit using input xformer and opamp from a PM2000. I went with no output transformer and it is lower gain that way. On the other hand, it's already got so much color (good) that I don't want more...
