Thanks for the thoughtful replies all. Let's see: Volume's full-up on the X-Amp. It's a balanced XLR-TRS connection (unless the cable's bad). The Boss tuner was used on the way in to disk but on the way out it was reamp>amp only. The buffer's tonal effect isn't much of a biggie next to this overall...

Great conversation. I recently recorded a choir in Copenhagen. Since it was not a commissioned work, the recording conditions were not ideal - there was an audience, with their coughing, program sheets crackling, children blurting, etc. I also had very little time and flexibility with mic placement....

Most of the recordings at http://www.antilog.org are done in M/S. I've tried a lot of my mics in MS, and my favorite are a TNC ACM 200 active ribbon on side, and a Dayton EMM6 omni measurement on mid, which was used to record this - http://www.antilog.org/posts/eve-risser-and-john-berndt

Those are pretty easy to mod. The ones I have owned were simple to work on, even the leads are attached with crimped spade lug type connectors instead of being soldered on. Why not just swap out the pot for a better one? Also, most that I have seen have a 2nd pot that you can use to adjust the volu...

I would try a Triton Audio FETHead - gives you 20dB gain at the mic using phantom power. I've got a couple and they work well.

I am using a stereo pan / volume pedal - Ernie Ball 6165, brand new. The volume curve is not linear (it suddenly gets loud with minimal pedal depression, then takes much more depression to get a bit more louder), and the pot is scratchy.
