According to the schematic , there's one capacitor in the SM7b, in the presence boost circuit. You say you worked the switches with no change, so it's unlikely to be that cap. To the thesis statement in the headline: how do indie artists get into Apple Music? First, are you sure it's not a clocking issue? From the description, it could be in that ballpark. I've seen some with over 6 or 8 patchebays....
The first 3 are probably the ones that are intrinsically connected in such a way that the desk won't fully function without them - normalled insert jacks and the like.

The others are probably just for outboard.
