I would use GarageBand for all of it. It can be super simple, or relatively deep, depending on how you use it. And, there are tons of loops available. Then, maybe consider Logic for the advanced kids who are really looking to dig deeper.

There are typically very slight differences between the internal latency of any two different converters. It doesn't matter if they're connected via ADAT or SPDIF or AES or Firewire.... Using two different converters will result in slightly (very slightly, talking milliseconds) different latency bet...

You should make an XLR patchbay for your mic signals and preamp inputs. Then, use a TRS patchbay for your inserts and compressors. Alternatively, and probably better, you could just add inputs for your external preamps to your wall plate in the tracking room and then just have the preamp outputs on ...

checkout the Antelope Orion 32. 32 channels through USB 2.0. It really works. I had one (search for another thread) and the only reason I let it go was I could not get latency low enough with my setup and Pro Tools 9 (on Win 7). If you are using a Rosetta w/Firewire today then I don't think it will...
