The Grammy Association (with help from NARAS) has published a couple of documents relating to audio delivery standards, including the awesome "Recommendation for Delivery of Recorded Music Products".

Tracks sheets and album crediting standards are also on this page. Good stuff.

You're trying to fix the thing that isn't the problem. Your drummer needs to learn to play correctly for the studio. It's not a club show. my job was to run interference between the A&R guy and the mixer. He would call a few times a day and say things like "it needs to make the shoulders roll" which I would have to translate to something like "more tamborine please". Hilarious! Common wisdom these days among studio designers is that, except in very controlled circumstances, all angled walls do is change your room's standing wave node points from predictable spots to unpredictable ones.

The analog inserts can also be used as analog outputs using the "hanging tip" method as described (which mirror the digital output). That price seems in the ballpark for small quantity purchases. I bought 2'x4' one-inch pieces last year for about $9 each. Yours are twice the thickness, so 6*18=$108 + a few bucks for the oil wars & goldman sachs.

Walter Piston's "Harmony" is the classic text. I wouldn't recommend it to a beginner, but you said you have some background already. It's a little more classical in general, but the theory is clear and comprehensive. Stay away from the most recent 5th edition, if possible, and look for a used 3rd or...

If you remove the breath sounds entirely, you will run the risk of giving the impression that a non-breathing robot is playing the flute. If the breathing is too loud, just duck each breath with some volume automation until the track sounds like a human being playing a flute instead of a sucking win...
