The Grammy Association (with help from NARAS) has published a couple of documents relating to audio delivery standards, including the awesome "Recommendation for Delivery of Recorded Music Products".
Tracks sheets and album crediting standards are also on this page. Good stuff.

my job was to run interference between the A&R guy and the mixer. Walter Piston's "Harmony" is the classic text. I wouldn't recommend it to a beginner, but you said you have some background already. If you remove the breath sounds entirely, you will run the risk of giving the impression that a non-breathing robot is playing the flute. If the breathing is too loud, just duck each breath with some volume automation until the track sounds like a human being playing a flute instead of a sucking win...
