I don't like micing the bell of saxophones, because it's often a pointy sound. I like an LDC or ribbon miced from the player's right side where it's getting the sounds coming from the places air escapes from open pads and the off axis bell sound.

It's more efficient and budget conscious to spend time setting up and then working on getting basics for multiple songs. As you mentioned, getting phase relationships and tones for drums is quite time consuming. And learning the space as you go will have its own bit of challenge. Ultimately, you may...

There's a million ways to go on this. What does the space sound like, what type of drum sound are you looking for and what kind of money do you want to spend? Some inexpensive but good sounding options include sE X1R ribbons, Muro Acoustics AC-7 SDC (I've not tried their LDC the AC-8 but am tempted)...

I'm not sure if I posted this, but a few months ago I bought a pair of Muro Acoustics AC7 SDCs and I quite like them. I've been using them a lot of overheads, and I really enjoy the imaging. Recently they sounded quite nice on acoustic guitar as well.
