i think by now the word 'stereo' means you gotta use 2mics minimum(or2tracks). i often hear of people tracking a guitar amp with two mics and calling that stereo A more common use of two mics is probably more of an EQ thing, you would get a better result panning two different takes to either side, ...

Keep in mind there's nothing at all wrong with mono... panning two guitars hard L and R makes sense because there are two guitars, but you don't HAVE to pan anything.
