It's needn't match exactly, but the wart should meet or exceed the mA demands of the fan. For instance, if the fan says 100 mA, a 150 mA, even 500 mA capable wart will be fine. It doesn't make much sense to get one what's way over spec, though. You'll be paying more for capacity that you don't need....

Look for DC offset voltage in the circuit. The signal lines should be at ground when all is quiet. If some parts of the circuit rest at ground, and others don't, it'll pop or thump when things are switched, as the DC comes through.

If that link you sent earlier is correct, the power supply you have has two outputs, labeled + and -, and no output marked ground. You'll need all 3 to get those modules going.
