As much as I adore my AC30... I say you should get a smaller, simpler tube amp to start. Even if you decide to go for an AC30 later, you will never regret having another flavor of good quality tube amp at your disposal.

One thing I did for the first time recently was had a single global reverb bus for a mix with no pre-delay, and then I set up different pre-delay busses feeding the reverb bus and fed different parts to the pre-delay busses depending on how far away from the listener ...

Make sure you're using the "Tape Cue" to monitor the tracks you've already recorded. Sounds like you're monitoring them by leaving the Assign switches engaged, which is routing them to the new track. This will come in handy at some point if you actually want to bounce tracks together! But until then...

Update: Seems it was one of the power tubes. I got a new set of EL84s in there, and so far, so good.

There are no symptoms while in standby -- I meant that there's a pop at the moment when the standby switch gets flipped. After that it's silent, as it should be.
