Is there Mac software/hardware that allows me to mix down from my analog machine to my harddrive?

You've got a lot of options. Basically you need some type of 2-channel A/D converter and software program on your mac to mix and create CDs. There are myriad devices which can do the A/D part and as many or more software programs for editing and mixing sound files. Your query is a little too open ended to get a detailed response. Alot will depend on your budget as well.
