Recording a Choir

I might be recording a choir and then selling copies of the performance. Does any one know what type of copy right/ licensing issues I would have to deal with? Is it just like when you record a band doing covers?

Pretty much, assuming you have permission from the choir to sell copies of their performance. As far as mechanical licensing of the actual music pieces, yes, it's pretty much the same.
