When I'm doing acoustic musiic I do normally record demo when we/I write a song and when all songs are finished I rerecord everything. When i'm making electronic music, I do only remix everything.

I write as I record, because I find that I have to finish a track in one sitting or it never gets finished.

Sometimes I write as I record, but usually I have most of the song
(chord progressions, melodies, basic tentative structure) written before I hit record. The songs that are written as I record tend to have a much different feel to them, so for variety's sake, its nice to do both approaches.
