I like old CB handsets. Some do the telephone sound well.

If you want to use a regular mic and go "tele-phoney" just pickup a cheap transformer off illBay for a couple bucks. I see lots of them with this voice-only band, although they won't have a sharp rolloff at either end. You might actually get something that sounds too good! You could always build ultra-simple RC filters for highpass and lowpass.

if you use the earpiece, you can just do one wire to ground, one to hot, and it will work.

if you want to use the mouthpiece, you need to add voltage. I have a circuit scrawled somewhere that will make it work, you need 3v, a capacitor and a resistor. if I can find the schematic I'll post it here later.
