I'm frustrated that it seems to be the norm that DAW's only allow you to run one plugin on the screen at one time. I understand this is probably to cut down on CPU usage, but with the advances in machine power, I wonder what gives?

I'm running Logic 5, but also use Pro Tools 7. Are there any programs out there that can let me stack (or rack!) plugins so I can modify multiple settings, check levels on each effect at the same time? Am I dreaming?

if by "running" more than one plug-in, you mean having the user interface (the pretty part) displayed, Pro Tools can certainly do this. clikc that little "bullseye" in the corner and that makes it "sticky" otherwise, and the next plugin you open will display along side that one. You can use this to display as many as you can fit on your monitor. I'm pretty sure other other apps have similar function.
