If I want to use Acid 5.0 with a traditional XLR microphone can I just use a XLR to phono adaptor to plug it into the mic port on my computer? - or will that not work?

If the microphone requires phantom power, then it will not work with the setup you described. If the microphone does not require phantom power, then the setup you described will "work" however the audio quality may not be great and you may have a small signal. You certainly will not break anything by trying this setup out and seeing what happens. There are a fair number of USB/firewire boxes that will nicely do what you want for ~$200 and on up.
