When doing a live remote in a bar/club do you mic the audience for an ambient room sound?

No, the stage mics pick up enough.

I mic from the stage pointing into the room and audience.

Unless you have a VERY safe mix position where you can trust a mic stand or two, I highly recommend cards towards the audience.

Where they go depends a lot on the logistics and the situation.

In some situations there is enough audience on the stage mic's, but it is always nice to have dedicated mic's for applause and crowd response when possible.

Cards, Omni's, even shotguns - it depends on the situation.
