I don't really use omni mics that often, except for ambience. There are occasional exceptions, but I just don't use them that often. I do use figure eight quite a bit. In fact, I actually bought a U48 because I actually wanted the figure eight pattern instead of the omni.

I record a lot of classical music, and so I do a lot of stereo-array recording. Omni's, figure-8's, and wide cardioids are often employed.
But even in spot mic'ing duties, I often employ an omni or a figure-8. Of course, I use cardioids and super/hypercards too. Others have mentioned how good most figure-8's are at rejecting things in their null, but I tend to think of microphone patterns as a videographer might use lights. It's a useful visual analogy that helps me when determining which pattern to use in a given situation; as well as how to position and aim the mic.

i use an EV 635a to record saxophone all the time, i love it.
