My old man said that the song was originally written with kind of a reggae feel, but the band never really worked it out, hence it never being on a studio album. And then one day they said screw it and tried it as a straight up rock number, and that's what made it on the record. Apparently Watts was still in the habit of playing it the old way. I agree that the coda of Layla is quite sour. I'm sure at them time they were all so in love with the vibe of the session, that it was worth it to them to keep it.
