Here's a few of the great ones, IMHO:

The Life Aquatic - perfect soundtrack for that movie
The Pianist - especially the Chopin pieces
Noi - great Icelandic movie
A Beautiful Mind
Fanny & Alexander - one of Bergman's last films
The Winged Migration

...among many others.

In no particular order:
Hellraiser I & II - the ultimate in unsettling, disturbing film music
Candyman (the original by Phillip Glass)
Frida - spectacular stuff, especially Lila Downs vocal perf.)
The Merchant of Venice (the new one by Jocelyn Pook)
Almost any Danny Elfman score
Alanis Morisette's song from Dogma
Titanic (yeah, I know....even the song at the end is a great piece of writing...imagine it sung by k.d laing as opposed to that other Canadian whose souless performance only irritates)

It's so funny you mention both those guys together. It seems like Michael's a fan of starwars. I remember him coming to one of the sessions with a Darth Vader helmet and a light saber (it was halloween). Those guys were so awesome.

I really liked the soundtrack for Akira. The only drawback is that it suffers all the cliches of early digital recording, but it's still a great soundtrack. I'm not even a big fan of anime, but It's a great record. The movie hardly showcases the score.

The Insider used part of Arvo Part's "Litany", which is one of my favorite pieces of music ever.

Pee Wees Big Adventure

Dead Man was the first that came to my mind.
Also, Breakfast at Tiffany's, Straight to Hell, and The Pianist.
