For the sandwhich: Colby Jack!!! This one gets extra points for sounding like a TV show about a hard-nosed PI set in 1973.

When I lived in Humboldt Country they had this cheese...I think it was called Creamy Garlic...my god was it good! Of course, I've been vegan for almost a year now...so...no...cheese.

Lots of great cheeses mentioned already.

We've been experimenting with unpasurized and otherwise funky Quebecois cheeses. The wildest one had ashes in it -- kind of a cross between a bleu and brie but way wilder.

Just got unpasteurized super sharp aged cheddar from the fromagerie today. . . .

Another vote for reggiano as well.

And what discussion of cheese would be complete without. . . .cheese "food." Velveeta makes the best chile con queso, and yes, I've tried it with asadero.

Fucking deadly.

Went through a big jarlsberg phase a couple of years ago. Really enjoy bleu cheese on burgers. Recently have eaten a bit of gorgonzola, which is also cool.

I'll second the jarlsberg. Some wheat bread, a slice of jarlsberg, one simple piece of green lettuce and topped with salad dressing. Yummy and simple!

I've heard that Velveeta is actually clear until they inject the color into it. Don't know if that's true.

hellz yeah! you've got a fantastic cheese place in your town, the fromagerie hamel, in that outdoor market in the north part of the city whose name i forget... amazing stuff.

and yes on the gjetost, especially lovely in thin bits on toast for breakfast. sweet and creamy, unlike any other cheese i've tried.

I really like the stinky-ass cheeses. Stilton is fuckin' awesome. I once had it with milk chocolate, and it was so good I almost spooged. Of course I was a little tipsy that night. And it does make your fingers smell like crotch rot.

Gorgonzola is yummy.

Fresh feta.

Camembert and brie are both tasty.

I'm always down with a good sharp cheddar.

I made a new sandwich this weekend. I call it the BLAB (Bacon, Lettuce, Apple, Brie). Multi-grain bread, Smithfield bacon, green leaf lettuce, a few slices of a red delicious apple, a few slices of brie, a little mayo ... heaven!

That sandwich sounds great. A few pear slices instead of the apple would be another good way to go too, I bet. And salads with walnuts, pear slices and blue cheese with a vinaigrette dressing or even something like a rice vinegar dressing (haven't tried it but sounds good) are pretty excellent too.

oh oh roasted garlic cheddar is the bomb too! i live near vermont and they got the best cheeses there.. i once drove around for hours with my girlfriend, to find a lil farmers market with cheese.. oh was it worth it.. we spent our last 10 dollars there, but we weren't sad at all once we got that cheese in our bellies. now she's fat and ugly... man i miss her.......
