I can't decide whether to do two groups of four in mono or one group of four (plus mults) in stereo.
Nore: Any suggestions must take into account that the song will also have two vocal tracks, a keyboard track, a bass track and a stereo pair of drum tracks.

"one group of four (plus mults) in stereo" should give you more panning options, in that you are placing the guitars within in the stereo field, instead of using two overdubbed mono tracks placing all their guitars either right or left.

Do you mean 4 guitar parts over 4 tracks and then bounced to stereo on 2 open tracks?

Put the basics on tape. 4 tracks for drums, keys, bass, 2 x vox.
Then, have the 4 guitarists come in and play along while you mix the song down.
Then you don't have to worry about track assignments.

Yep. That's exactly what I mean
Then you have to do it while ther are 6 open tracks. Actually 7, because there should be a track between the 4 mono and the 2 stereo so you don't run into weird ass feedback issues and whatnot.

Re needing 7 open tracks, you are assuming, Sr. drumsound, that he's using tape, no?
Just that onna 8-track digital recorder, the open middle channel wouldn't be necessary.

You are correct. In my head I was confusing this thread with one about a Fostex r8 1/4" 8-track.

I'm using tape (1/4" to boot, but not a Fostex). I've found, from experience, that you can get away with bouncing to adjacent tracks on (relatively speaking) modern machines so long as you keep the levels on each of the to-be-bounced tracks reasonably below 0 dB.
I was talking to the guy who'll be engineering the sessions and he suggested we just do all four parts at once onto two tracks. Which is doable as three of us can play guitar and the fourth can busk it.
Then we do the other four parts on another pair of tracks and bounce the resulting four for an eight guitar strum orgy

Are there actually 4 different guitar parts? Why not just use two performances and pan them, it normally gives you a bigger, more spacious sound that way.
Obviously, if you have multiple parts, you need more performances.
