In particular, the violinist/fiddler in this video is stomping on something to produce a thumpy sound and I'm wondering if anyone can identify what it is?

It's a literal stomp box, I've seem em made out of everything from cardboard to old license plates.

That one looks to have two parts, but I only hear one tone, so it's probably just a place to rest his foot and an active part. You can buy 'em, or you can make 'em depends on what you want to turn your hand to, but it's a piezo disk, a jack, and a container. Experimenting is fun.

The ones that are license plates sometimes actually use magnetic guitar pickups.

Chris Whitley used one a lot, and I think John Lee Hooker did sometimes (altho' his might not have had a pick-up).
